Meghan Markle’s Go-To Spring Cake: A Dreamy Italian Olive Oil & Lemon Delight (RECIPE)

I am totally hopeless when it comes to baking, but somehow, this little cake always turns out just right! 💛 But before we jump to the recipe, let me tell you what makes it so special.

Back when Meghan Markle’s blog The Tig was still a thing (RIP 😢), I managed to grab a recipe for a dreamy Italian olive oil and lemon cake. Now, I know that combo might not scream “delicious” at first, but trust me—this cake is so moist, light, and fresh that even those who usually say “no thanks” to sweets will be asking for seconds.

As you might haven seen, Meghan just announced on Instagram that she’s launching a new lifestyle brand called As ever! People are already saying it’ll be a more grown-up version of The Tig. From what we know so far, she’s planning to mix fashion and food, sell chic homeware (hello, dreamy table settings! ✨), and even offer gourmet treats like jams and vegan spreads.

The best part? Her brand is supposed to be budget-friendly, not another fancy-schmancy Goop by Gwyneth Paltrow.

And just like everything Duchess Meghan loves, this recipe is effortless yet special. Plus, it won’t leave your kitchen looking like a tornado just rolled through.

Here’s how I made it:

You’ll need:

🥄 1 cup olive oil
🥚 3 large eggs
🍚 1 ½ cups powdered sugar
🍦 2 teaspoons vanilla extract
🍋 ½ cup lemon juice
🍋 Zest of 3 lemons
🧂 1 teaspoon salt
✨ ½ teaspoon baking powder
✨ ½ teaspoon baking soda
🌾 2 cups flour
🥛 1 cup milk

  • a little extra powdered sugar for dusting on top!

Let’s bake!

1️⃣ Preheat your oven to 350°F (180°C). Grease a cake pan (about 8 inches in diameter is perfect!) and line it with parchment paper.

2️⃣ In a big bowl, mix olive oil, eggs, and sugar. Then add vanilla, lemon zest, and lemon juice. Stir everything together until smooth.

3️⃣ In a separate bowl, whisk together the dry ingredients (salt, baking powder, baking soda, and flour). Gradually add them to the wet mixture, stirring as you go. Finally, pour in the milk and give it one last mix.

4️⃣ Pour the batter into your prepared cake pan and bake for about 50 minutes. The cake is done when it has a beautiful golden top and a toothpick inserted in the center comes out clean. If there’s still batter on it, give the cake a few more minutes in the oven.

5️⃣ Once baked, take it out and let it cool completely before serving. Then, dust it with powdered sugar for that final, elegant touch!
